Balsamic Mixed-Berry Grilled Cheese

This balsamic mixed-berry grilled cheese combines creamy Havarti and Swiss cheeses with juicy berries tossed in balsamic, honey, and lemon juice. Served on toasted sourdough, it’s a decadent sweet-and-savory treat perfect for lunch or a comforting snack.

Ingredients

1 tablespoon balsamic vinegar

1 tablespoon honey

1 tablespoon fresh lemon juice, plus additional as needed

1 ounce blueberries

1 ounce blackberries

1 ounce raspberries

3 tablespoons softened salted butter

2 slices sourdough bread

1 slice Havarti cheese

1 slice baby Swiss cheese

Directions

  1. In a medium bowl combine balsamic vinegar, honey and 1 tablespoon lemon juice. Add blueberries, blackberries, raspberries; toss to coat. Slightly mash berries; set aside.
  2. Preheat a skillet over medium heat. Spread one side of each bread slice with butter. Place bread slices, butter sides down, in skillet. Place Havarti cheese on one slice and baby Swiss cheese on the other slice. Cook until cheese is melted and the bread is lightly toasted. Remove from skillet.
  3. Using a slotted spoon, spoon berries on top Harvarti cheese toast. Top with remaining toast, cheese slide down.
