Balsamic Tomato Salad

A simple and refreshing salad featuring wedge-cut yellow and orange tomatoes tossed with fresh basil and a zesty balsamic vinaigrette. Serve immediately or chill to let flavors meld.

Ingredients

3 medium yellow tomatoes, cut in wedges

3 medium orange tomatoes, cut in wedges

3 tablespoons chopped fresh basil

1⁄2 cup extra-virgin olive oil

2 tablespoons balsamic vinegar

1 large clove garlic, minced

1⁄2 teaspoon salt

1⁄4 teaspoon ground black pepper

Directions

  1. In a bowl combine tomatoes and basil.
  2. Thoroughly mix together olive oil, balsamic vinegar, garlic, salt and pepper; pour over tomatoes.
  3. Serve immediately or cover and chill up to 3 hours before serving.
