These savory blue cheese cream puffs are a delightful twist on classic choux pastry. Flavored with a touch of cayenne and packed with creamy blue cheese, they bake into light, golden puffs that are perfect for appetizers, parties, or elegant hors d’oeuvres. Serve warm for best flavor and texture.

Ingredients

½ cup water

¼ cup unsalted butter

⅛ teaspoon salt

⅛ teaspoon cayenne pepper

½ cup all-purpose flour

2 eggs

2 ounces (6 tablespoons) blue cheese crumbles

Directions

  1. Preheat oven to 400°F. In a medium saucepan, heat water, butter and salt over medium heat until mixture begins to boil. Add cayenne pepper and flour; stir vigorously with a wooden spoon for 1 minute.
  2. Remove from heat; stir in eggs, one at a time, until each is incorporated. Stir in blue cheese. Drop dough by level tablespoons 2 inches apart onto a parchment-lined or ungreased baking sheet. Bake about 22 minutes or until light brown on bottom. Serve warm.
