Blueberry Crostini

Crispy French baguette slices layered with rich mascarpone, plump blueberries, fragrant basil, and a touch of honey create a sweet and refreshing crostini perfect for entertaining.

Ingredients

1 thin French baguette

Oil

½ cup mascarpone cheese

1½ cups fresh blueberries, washed and dried

4 large basil leaves, cut into strips

Honey, to taste

Directions

  1. Preheat oven to 350ºF. Cut baguette into 32 slices. Brush both sides of each slice with oil and place on a baking sheet. Bake 12 to 15 minutes or until golden, turning crostini over once during bake time. Let cool.
  2. Spread mascarpone on top of crostini. Divide blueberries among crostini. Garnish crostini with basil and drizzles of honey.
