Recipe Information

Total Time:
Yield:
10 appetizers

Ingredients

2 medium tomatoes, seeded and diced (about 1 cup)

¾ cup chopped red onion

½ cup chopped fresh basil, plus additional for garnish

4 tablespoons extra-virgin olive oil, divided

Sea salt, to taste

Cracked black pepper, to taste

3 medium unpeeled garlic cloves

10 baguette slices

2 tablespoons unsalted butter, softened

Directions

  1. In a medium bowl, gently stir together tomatoes, onion, ½ cup basil and 2 tablespoons olive oil. Season with salt and pepper. Cover and refrigerate at least 1 hour.
  2. Meanwhile, preheat oven to 400°F. Wrap garlic cloves in foil. Place in a small baking pan and bake for 20 to 25 minutes or until softened; cool.
  3. In a rimmed baking pan, place baguette slices. Drizzle remaining 2 tablespoons olive oil on both sides of each slice. Bake for 4 to 6 minutes or until toasted, turning halfway through. Set toasts aside.
  4. Preheat broiler to high. Remove and discard garlic skins. In a small bowl, mash garlic with a fork; stir in butter.
  5. Spread garlic butter on baguette toasts. Top with tomato-basil mixture. Garnish with basil leaves.
