Ingredients
1 stick (½ cup) cold butter
3 pounds 80%-lean ground beef
2 teaspoons kosher salt
1 teaspoon black pepper
24 cocktail buns, toasted
Assorted toppers: spiralized yellow, red or green bell peppers, thinly sliced red onion or dill pickle slices
Directions
Cut butter into 24 cubes. Spread cubes out in shallow pan. Chill until needed.
In a medium bowl, combine beef, salt and pepper. Divide meat mixture into 24 portions. Stuff butter cubes into center of each portion; form into mini patties. Cook patties in batches in a grill pan over medium heat for 6 to 8 minutes or until medium doneness, turning once. Serve on cocktail buns with desired topper.
