Golden, tender buttermilk waffles made from a homemade mix, with a crisp exterior and soft interior, ideal for topping with syrup, fresh berries, or whipped cream for a delightful breakfast or brunch.

Ingredients

3½ cups all-purpose flour

¼ cup sugar

3 tablespoons malted milk powder

2 teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

4 large eggs

4 cups buttermilk

1 cup vegetable oil

2 teaspoons vanilla extract

Maple and fruit syrups, for serving

Fresh berries, for serving

Flavored butters, for serving

Whipped cream, for serving

Directions

Waffle Mix
  1. For waffle mix, in a large bowl stir together flour, sugar, malted milk powder, baking powder, baking soda and salt. Cover and store in an airtight container.
Buttermilk Waffles
  1. To make waffles, preheat waffle maker. Place waffle mix in a large bowl. Make a well in the center of the flour mixture; set aside.
  2. Separate eggs; place yolks in a medium bowl and whites in a small mixing bowl. Set aside.
  3. In bowl with egg yolks, add buttermilk, oil and vanilla. Whisk mixture together to combine well; set aside. Beat egg whites with an electric mixer on medium to high until stiff peaks form (tips stand straight); set aside.
  4. Add egg yolk mixture all at once to the flour mixture. Stir just until moistened (batter will be slightly lumpy). Gently fold beaten egg whites into mixture.
  5. Add batter to preheated waffle maker. Close lid quickly and bake according to manufacturer’s directions until waffle is golden brown. When done, use a fork to lift waffle off grid; keep warm in a 200°F oven for up to 10 minutes. Repeat with remaining batter. Serve waffles warm topped with syrup, fresh berries, flavored butters and/or whipped cream.
  6. Make-ahead directions: Prepare waffles and cool on a wire rack. Layer waffles between parchment paper in an airtight container. Freeze for up to 3 months. Thaw waffles and reheat in a 200°F oven until warm.
