Cajun Shrimp Foil Packs

Shrimp, sausage, baby potatoes, green beans, and corn are seasoned with Cajun spices and grilled in foil packets with garlic butter, creating a simple and flavorful dinner.

Ingredients

¼ cup salted butter, melted

1 shallot, minced

4 cloves garlic, minced

1 tablespoon chopped Italian parsley, plus additional for garnish

1 tablespoon fresh lemon juice

20 baby red potatoes, halved

2 cups green beans, trimmed

2 ears sweet corn, husks and silk removed; halved crosswise

¼ cup water

1 pound peeled and deveined raw shrimp, tails on (16 to 20 count)

2 tablespoons Cajun seasoning

1 (14-ounce) package fully cooked Cajun-style smoked sausage, sliced

Lemon wedges, for garnish

Directions

  1. Preheat grill for direct cooking over medium heat (350°F). In a small bowl, stir together melted butter, shallot, garlic, 1 tablespoon parsley and lemon juice; set aside.
  2. In a microwave-safe medium bowl, combine potatoes, beans and corn. Add water; cover with plastic wrap. Microwave on high for 5 to 6 minutes or until vegetables are crisp-tender. Drain well; transfer to a large bowl. Add shrimp. Sprinkle with Cajun seasoning; toss to coat.
  3. To assemble packets, cut four 15×12-inch sheets of heavy foil; lightly spray each sheet with nonstick cooking spray. Divide and place shrimp-vegetable mixture and sausage in the center of each sheet of foil. Drizzle butter mixture over shrimp and vegetables. Bring up two short sides of foil. Double-fold top, then double-fold ends to seal packets, leaving room for heat circulation inside.
  4. Grill foil packets for 8 to 10 minutes or until vegetables are tender and shrimp reaches 145°F. Carefully open packets; serve with lemon wedges, if desired.
