Cherry Puff Pies

These crispy mini cherry puff pies feature tender dough encasing sweet cherry filling, fried to golden perfection and drizzled with a delicate almond-flavored glaze.

Ingredients

2 cups all-purpose flour, plus additional for dusting

1 tablespoon baking powder

½ teaspoon salt

⅓ cup all-vegetable shortening

⅔ cup cold whole milk

½ cup canned cherry pie filling and topping

Vegetable oil, for frying

1½ cups powdered sugar

1 teaspoon almond extract

1 to 2 tablespoons whole milk

Directions

  1. Line a large baking sheet with parchment paper; lightly dust with flour.
  2. In a medium bowl, stir together 2 cups flour, baking powder and salt. Add shortening and ⅔ cup cold milk; stir until dough comes together.
  3. On a lightly floured surface, roll dough to ¼ inch thick. Using a 4-inch round, scallop-edge cookie cutter, cut dough into 32 rounds. Using a 1-inch star-shape cookie cutter, cut out stars in the centers of half of the dough rounds. Reserve the star cutouts.
  4. Spoon 1 teaspoon cherry pie filling with at least one cherry onto the center of each dough round without a cutout. Place a cutout round on top; lightly press edges together to seal. Transfer puff pies to prepared baking sheet.
  5. In a Dutch oven, heat 1½ inches oil to 325°F. In batches, fry pies and/or stars for 4 to 5 minutes or until golden brown, turning over as needed for even browning. Remove with a fish spatula or slotted spoon; drain on paper towels.
  6. For glaze, in a small bowl, whisk together powdered sugar, almond extract and enough milk to make a drizzling consistency. Drizzle glaze over fried pies and stars.
