Chilled Green Apple Soup

A silky, chilled green apple soup combining tart apples with cinnamon, cream, and a hint of wine for a crisp yet creamy summer refresher.

Ingredients

2 cups apple juice

½ cup granulated sugar

1 tablespoon fresh lemon juice

5 inches cinnamon stick

6 Granny Smith apples, cored, peeled and cut into eighths

1 cup whipping cream

3 tablespoons Riesling wine or additional apple juice

Directions

  1. In a large saucepan stir together 2 cups apple juice, sugar, lemon juice and cinnamon stick. Stir in apples. Bring to boiling; reduce heat and simmer about 15 minutes or until apples are tender.
  2. Transfer to a blender or food processor; process at least 1 minute or until very smooth. Pour into a bowl. Stir in cream and wine or additional apple juice. Cover and chill at least 3 hours or until cold.
  3. Garnish with shredded apple peel.
