These coconut-filled cupcakes are a decadent treat featuring a moist chocolate base with a luscious coconut center. Each cupcake is crowned with smooth, rich chocolate buttercream frosting, creating a creamy, indulgent bite for chocolate lovers.

Ingredients

1⁄2 cup butter (room temperature)

1¼ cups granulated sugar

1 teaspoon vanilla extract

2 eggs

1¼ cups all-purpose flour

1⁄2 cup unsweetened cocoa powder

3⁄4 teaspoon baking soda

1⁄2 teaspoon salt

1⁄2 cup sour cream

1⁄4 cup water

1 cup flaked coconut

1⁄3 cup evaporated milk

Chocolate Buttercream Frosting (3 cups)

2 ounces unsweetened chocolate

3 cups confectioners’ sugar

3 tablespoons unsweetened cocoa powder

1 cup unsalted butter (room temperature)

1⁄2 teaspoon vanilla extract

Directions

Cupcakes
  1. Preheat oven to 350°F. Place 22 cupcake liners in cupcake tins.
  2. In a large mixing bowl beat butter and sugar on medium speed of an electric mixer until light and fluffy. Beat in vanilla. Add eggs one at a time, beating well after each. Sift together flour, cocoa powder, baking soda and salt. With mixer on low speed, add half of the flour mixture, then the sour cream; mix until combined. Add remaining flour mixture and water; mix thoroughly.
  3. For coconut filling, combine coconut and evaporated milk. Spoon 1 rounded tablespoon of chocolate batter into cupcake liners, spreading to cover the bottom. Top with 1 teaspoon coconut filling. Cover filling with 1 rounded tablespoon of the batter.
  4. Bake in preheated oven about 20 minutes or until a toothpick inserted in center comes out clean. Remove hot cupcakes from pan and cool on a wire rack.
  5. Frost each with 2 tablespoons Chocolate Buttercream Frosting.

Chocolate Buttercream Frosting (3 cups)
  1. In a microwave-safe bowl melt chocolate in the microwave on high power for 1 to 2 minutes, stirring after 1 minute; allow to cool.
  2. In a mixing bowl sift together confectioners’ sugar and cocoa powder. Beat in butter until smooth, about 2 minutes. Beat in melted chocolate and vanilla until smooth and creamy.
