Chocolate Pancakes With Tiramisu Filling

Decadent chocolate pancakes stacked with a silky tiramisu filling and finished with berries for a luxurious, dessert-like morning indulgence.

Ingredients

Pancakes

1½ cups all-purpose flour

½ cup granulated sugar

½ cup unsweetened cocoa powder, sifted

2 teaspoons baking powder

¼ teaspoon baking soda

¼ teaspoon salt

2 large egg yolks, beaten

1¼ cups milk

¼ cup (½ stick) butter, melted

1 teaspoon vanilla

2 large egg whites

Purchased strawberry topping, fresh berries and mint leaves

Tiramisu Filling (1 cup)

½ of an 8-ounce package cream cheese, softened

½ of an 8-ounce container mascarpone cheese

1⁄3 cup confectioners’ sugar

1 teaspoon instant coffee granules

1½ tablespoons warm water

Directions

Pancakes
  1. In a large bowl combine flour, sugar, cocoa powder, baking powder, baking soda and salt. In another bowl combine egg yolks, milk, melted butter and vanilla; stir into dry ingredients just until combined.
  2. In a small bowl beat egg whites until stiff peaks form; fold into batter.
  3. Lightly grease and preheat a griddle or skillet to medium-low heat (300°F). Pour ¼ cup batter onto griddle for each pancake. Cook until bubbles appear across surface of pancakes. Turn and cook about 45 seconds more or until the underside is lightly browned. (Sides of pancakes will still appear dark and shiny.)
  4. For a three-cake serving, place one pancake on a plate and spread with about 2 tablespoons of Tiramisu Filling; repeat. Top with another pancake, purchased strawberry topping, fresh berries and mint leaves. For a two-cake serving, omit the second pancake and filling layer.

Tiramisu Filing
  1. In a bowl beat cream cheese, mascarpone cheese and confectioners’ sugar until well combined.
  2. In a small bowl dissolve the coffee granules in the warm water; add to the cheese mixture and mix well.
