Citrus Chia Pudding

Creamy chia pudding infused with almond milk, orange zest, and honey, finished with a sparkling citrus granita for a bright, refreshing treat.

Ingredients

1 cup almond milk

3 tablespoons chia seeds

1 cup unsweetened orange juice

3 tablespoons honey

1 teaspoon grated orange zest

⅓ teaspoon almond extract

Dash salt

Directions

  1. In a small bowl, combine almond milk and chia seeds. Cover and refrigerate for 6 hours or overnight.
  2. For granita, pour orange juice into a small metal loaf pan. Cover and freeze for 3 hours or until frozen.
  3. Using a fork, scrape surface into flaky crystals. Cover and freeze until serving time. Just before serving, stir honey, orange zest, almond extract and salt into chilled chia mixture.
  4. Divide among dessert glasses. Top with granita.
