Creamy chia pudding infused with almond milk, orange zest, and honey, finished with a sparkling citrus granita for a bright, refreshing treat.
Ingredients
1 cup almond milk
3 tablespoons chia seeds
1 cup unsweetened orange juice
3 tablespoons honey
1 teaspoon grated orange zest
⅓ teaspoon almond extract
Dash salt
Directions
- In a small bowl, combine almond milk and chia seeds. Cover and refrigerate for 6 hours or overnight.
- For granita, pour orange juice into a small metal loaf pan. Cover and freeze for 3 hours or until frozen.
- Using a fork, scrape surface into flaky crystals. Cover and freeze until serving time. Just before serving, stir honey, orange zest, almond extract and salt into chilled chia mixture.
- Divide among dessert glasses. Top with granita.
