Ingredients
2 cups sugar
½ cup cornstarch
½ teaspoon salt
1¼ cups water
3 tablespoons butter
4 teaspoons grated lemon zest
½ cup lemon juice
6 drops yellow food coloring (optional)
Directions
- In a medium heavy saucepan stir together sugar, cornstarch and salt; whisk in water. Cook, stirring constantly over medium heat, until sugar mixture thickens and comes to boiling. Boil for 1 minute, stirring constantly.
- Remove from heat. Whisk in butter. Add lemon zest and juice. If using, add yellow food coloring. Cover surface with plastic wrap and chill.
