Ingredients
Nonstick cooking spray
5 tablespoons unsalted butter
1 (16-ounce) bag mini marshmallows
1 teaspoon pure vanilla extract
½ teaspoon fine sea salt
2 cups Rice Krispies cereal
4 cups Fruity Pebbles cereal
Vanilla Ice Cream or desired flavored ice cream
Directions
- Line a 13×9×2-inch baking pan with parchment paper, extending paper over edges of pan. Spray parchment paper with cooking spray. Set aside.
- In a large nonstick skillet melt butter over low heat. Add in marshmallows. Cook over low heat, stirring constantly, until marshmallows are completely melted. Remove from heat; stir in vanilla and salt.
- Gently stir in cereals until combined. Transfer to prepared pan. Lightly spray your hands with cooking spray; gently press cereal mixture evenly in pan. Cool cereal mixture until firm.
- Use paper to lift cereal from pan. Using a large round cookie cutter or biscuit cutter, cut cereal bar into rounds.
- Press one scoop ice cream between 2 cereal rounds and freeze 20 minutes or until ice cream sandwiches are firm.
