Cookie-Coconut Crumb Crust

This cookie-coconut crumb crust is an easy dessert base made with crushed vanilla wafers, sweetened coconut, and melted butter. Ideal for cream pies or tarts, it bakes to a golden, flavorful crust that holds up beautifully.

Ingredients

Nonstick cooking spray

4½ cups vanilla wafers

½ cup granulated sugar

1 cup sweetened flaked coconut

1 cup melted butter

Directions

  1. Preheat oven to 325°F. Lightly spray a 10-inch, deep-dish pie plate or deep tart pan with cooking spray; set aside.
  2. In a food processor, combine vanilla wafers and sugar. Cover and pulse until fine crumbs form. Transfer crumb mixture to a large bowl. Add coconut; stir in melted butter until well combined.  
  3. Spread crumb mixture in prepared pie plate. Press evenly onto bottom and sides. Bake for 12 to 15 minutes or until golden brown. Cool completely on a wire rack.
