Ingredients
Nonstick cooking spray
4½ cups vanilla wafers
½ cup granulated sugar
1 cup sweetened flaked coconut
1 cup melted butter
Directions
- Preheat oven to 325°F. Lightly spray a 10-inch, deep-dish pie plate or deep tart pan with cooking spray; set aside.
- In a food processor, combine vanilla wafers and sugar. Cover and pulse until fine crumbs form. Transfer crumb mixture to a large bowl. Add coconut; stir in melted butter until well combined.
- Spread crumb mixture in prepared pie plate. Press evenly onto bottom and sides. Bake for 12 to 15 minutes or until golden brown. Cool completely on a wire rack.
