Bright, tangy, and naturally sweet, this chilled green apple soup blends apples, grapes, and lemon for a crisp, refreshing dish that’s as elegant as it is revitalizing.

Ingredients

4 Granny Smith apples, cored and chopped

3 cups green grapes

1½ cups unsweetened nondairy yogurt alternative

1 cup agave nectar

1 cup fresh lemon juice

1 cup fresh spinach leaves

2 teaspoons Himalayan salt

Edible rose petals and thyme leaves, for garnish

Directions

  1. Combine apples, grapes, yogurt alternative, agave nectar, lemon juice, spinach and salt in a large bowl.
  2. Place half of the mixture in a blender. Cover and blend until smooth. Strain blended mixture into a serving bowl. Repeat blending and straining with remaining mixture.
  3. Garnish each serving with rose petals and thyme leaves, if desired.
