Cucumber-And-Radish Toast Points

These Cucumber & Radish Toast Points feature thinly sliced cucumber and radish layered over garlic-and-herb spread on toasted ancient grain bread, garnished with fresh chives, thyme, and flaky sea salt for a bright and herbaceous appetizer.

Ingredients

8 slices ancient grain and seed bread

½ cup Alouette garlic & herbs soft spreadable cheese

1 mini cucumber, very thinly sliced

4 red radishes, very thinly sliced

Fresh chives, minced, for garnish

Fresh thyme, for garnish

Flaky sea salt, for garnish

Directions

  1. Lightly toast bread in a toaster; cool slightly. Trim off crusts to make 3-inch-square pieces of bread. Diagonally cut each piece in half.
  2. Spread 1 to 1½ teaspoons garlic & herbs cheese spread on each triangle toast. Arrange cucumbers and radish slices on top. Garnish with chives, thyme and flaky sea salt, if desired.
