A refreshing cucumber salad with sliced cucumbers, onions, and green peppers in a sweet, tangy dressing seasoned with celery, mustard, and dill seeds. Perfect chilled as a side dish or picnic favorite.
Ingredients
1½ cups granulated sugar
1 cup cider vinegar
1 tablespoon salt
1 teaspoon celery seed
1 teaspoon mustard seed
1 teaspoon dill seed
6 cucumbers, peeled and sliced
1 large onion, sliced
1 large green pepper, sliced
Directions
- In a medium saucepan whisk together sugar, vinegar, salt and seeds. Heat just to boiling or until sugar dissolves. Remove from heat and cool to room temperature.
- In a large bowl combine cucumbers, onion and green pepper. Pour dressing over vegetables, stirring to coat. Cover and refrigerate overnight. Serve with a slotted spoon.
