Ingredients
5 pounds Yukon gold potatoes, scrubbed
¾ cup half-and-half
½ cup butter
2 teaspoons kosher salt
1 teaspoon white pepper
1 (5.6-ounce) package garlic and herb cheese dip
Additional butter, melted; optional
Fresh parsley, for garnish
Directions
In a large pot, cook potatoes, covered, in enough boiling lightly salted water to cover for 25 to 30 minutes or until tender; drain. Let potatoes cool.
Peel potatoes and pass through a ricer into a large bowl.
In a microwave-safe bowl, place half-and-half, butter, salt and white pepper. Microwave on high for 1 to 2 minutes or until hot and butter is melted. Stir garlic and herb cheese dip and butter mixture into potatoes. If desired, top with additional butter, and garnish with parsley.
