This Garlic-Tomato Jam Sourdough Focaccia features a soft, airy sourdough base topped with roasted garlic-onion jam, cherry tomatoes, whole garlic cloves, and a drizzle of olive oil. Garnished with fresh basil, flaky sea salt, and cracked black pepper, it’s a sophisticated bread ideal for brunch, entertaining, or gourmet snacking.

Ingredients

1 recipe Sourdough Focaccia Bread dough

2½ cups cherry tomatoes, whole, halved and/or sliced

1 tablespoon refrigerated roasted garlic paste

½ (16-oz.) jar roasted garlic-onion jam (such as Stonewall Kitchen brand)

2 tablespoons double-concentrated tomato paste

8 cloves unpeeled garlic

Olive oil, for serving

Fresh basil, for garnish

Flaky sea salt, for serving  

Cracked black pepper, for serving

Directions

  1. Prepare and shape focaccia dough in baking pan as directed through Step 5 of Sourdough Focaccia Bread recipe.
  2. In a medium bowl, gently stir together cherry tomatoes and garlic paste; set aside.
  3. In a small bowl, stir together roasted garlic-onion jam and tomato paste; spread on top of dough. Evenly spread cherry tomatoes mixture on top; slightly press garlic cloves into dough. Bake and cool as directed in Sourdough Focaccia Bread recipe.
  4. Drizzle with olive oil; garnish with fresh basil and sprinkle with flaky sea salt and cracked black pepper, if desired.
