Soft, chewy granola bars layered with a tangy apricot-blueberry filling, sweet coconut, and a buttery oat crumble—a fruity, wholesome treat perfect for snacks or breakfast on the go.

Ingredients

1 cup apricot marmalade

¾ cup milk

½ cup sweetened flaked coconut

1 teaspoon vanilla extract

½ cup frozen blueberries

2 cups quick oats

1 cup packed brown sugar

¾ cup all-purpose flour

½ teaspoon baking soda

½ teaspoon ground cinnamon

½ cup salted butter, melted

Directions

  1. For filling, in a small saucepan, cook marmalade, milk, coconut, and vanilla over medium heat about 15 minutes or until mixture boils and thickens, stirring occasionally. Remove from heat and cool. Stir in frozen blueberries.
  2. For granola base, in a medium bowl, stir together oats, brown sugar, flour, baking soda, and cinnamon until well combined. Pour melted butter over dry ingredients and stir until thoroughly moistened. Press 3 cups of the mixture into the bottom of an 8-inch-square baking pan. Place in refrigerator for 30 minutes.
  3. Preheat oven to 350°F. Spread cooled filling evenly over granola base. Sprinkle remaining granola mixture over filling. Bake about 25 minutes or until topping is golden. Cool completely before cutting.
