Ingredients
1 cup pumpkin puree
8 ounces low-fat cream cheese, softened
1⁄2 teaspoon pure vanilla extract
1⁄3 cup sugar
1 teaspoon pumpkin pie spice
1 cup low-fat whipped topping
1½ cups vanilla Greek yogurt
1½ cups cinnamon granola
Directions
To make pumpkin cheesecake mixture, in a large bowl add pumpkin and cream cheese. Beat with an electric mixer on medium speed until combined. Add vanilla, sugar and pumpkin pie spice. Beat until combined. With a rubber spatula fold in whipped topping.
To assemble each parfait, pipe or spoon about 1 tablespoon of Greek yogurt into the bottom of a 5-ounce glass. Next, place about 1 tablespoon of granola on top of Greek yogurt. Pipe or spoon about 1 tablespoon of pumpkin mixture onto the granola. Repeat until you have 8 layers. Chill parfaits in refrigerator for 30 minutes.
