Ripe peaches are grilled and basted with a spiced brown sugar glaze, then served warm with ice cream and granola for a sweet, satisfying dessert.
Ingredients
6 tablespoons butter
⅓ cup packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon ground ginger
Pinch of salt
6 large ripe freestone peaches
Vanilla ice cream
Granola
Directions
- In a small saucepan combine butter, brown sugar, spices and salt. Bring to a boil; continue boiling for 1 to 2 minutes or until thickened to a glaze consistency. (Keep the glaze warm so it doesn’t get too hard for basting.)
- Rinse the peaches and blot them dry with paper towels. Cut each peach in half and discard the pit. Place them cut side down on a paper towel until ready to grill to prevent fruit from turning brown.
- Grill on an uncovered grill over high heat about 6 minutes or until light brown, turning and basting with glaze frequently.
- Serve warm, topped with any remaining glaze, vanilla ice cream and granola.
