Ingredients
3 cups heavy cream
1¼ cups sugar
Pinch of salt
1¼ tablespoons pure vanilla extract
1½ cups half-and-half
½ cup strawberry jam, divided
½ cup blackberry jam, divided
1 cup strawberries
1 cup blackberries
Fresh mint leaves
Directions
Place empty airtight container in freezer 2 hours before mixing. In a large mixing bowl, whisk together heavy cream, sugar, salt, vanilla and half-and-half. Transfer to ice-cream maker and freeze according to manufacturer’s instructions.
Remove airtight container from freezer. Scoop ⅓ of ice cream into the container evenly. Spoon ¼ cup strawberry jam and ¼ cup blackberry jam onto ice cream. Layer ⅓ of ice cream on top. Place remaining jam onto ice cream. Top with remaining ice cream. Use butter knife to gently swirl the ice cream and jam layers together. Place in freezer for 2 hours before serving.
Scoop into individual bowls and serve with fresh strawberries and blackberries. Garnish with mint leaves.
