Fluffy mascarpone whipped with honey, vanilla, and lemon zest is topped with sweet, juicy macerated stone fruit for a fresh, elegant dessert. Garnished with fresh thyme and served with cinnamon tortilla chips, it’s a simple yet stunning dish for entertaining or seasonal indulgence.

Ingredients

2 cups mascarpone cheese

2 tablespoons honey

4 teaspoons lemon zest

4 teaspoons powdered sugar

1 teaspoon pure vanilla extract

1 teaspoon salt

1 recipe Macerated Stone Fruit, right

Fresh thyme sprigs, for garnish

Cinnamon tortilla chips, for serving

Directions

  1. In a food processor, combine mascarpone cheese, honey, lemon zest, powdered sugar, vanilla and salt. Cover and process for 1 to 2 minutes or until mixture is combined and fluffy.
  2. Transfer cheese mixture to a shallow serving bowl. Top with Macerated Stone Fruit. Garnish with thyme sprigs, if desired. Serve with cinnamon tortilla chips, if desired.

Macerated Stone Fruit:

In a medium bowl, combine 1 cup pitted and sliced nectarines and plums, 2 tablespoons granulated sugar and 1 tablespoon fresh orange juice. Cover and refrigerate for 2 hours or until fruit begins to soften and juices develop.
