This homemade lemon curd is a smooth, creamy, and tangy spread made from fresh lemon juice, zest, eggs, sugar, and butter. Whisked over gentle heat until thickened, it’s ideal for topping desserts, spreading on scones, or using as a luscious filling for tarts and cakes.

Ingredients

2 large eggs

2⁄3 cup granulated sugar

1½ teaspoons grated lemon zest

1⁄2 cup fresh, strained lemon juice (2 lemons)

6 tablespoons butter, cubed

Directions

  1. In a medium heavy saucepan whisk together eggs, sugar, lemon zest and juice. Add butter. Cook over medium heat, whisking constantly, until lemon mixture thickens and bubbles all over. Immediately pour curd through a fine sieve into a bowl.
  2. Cover surface with plastic wrap and chill.
