Tropical and sweet, these Macadamia Island Drops blend buttery cookie dough with white chocolate chips, macadamia nuts, and bits of dried pineapple and papaya for a chewy island-inspired treat.

Ingredients

1 cup unsalted butter, softened

1½ cups granulated sugar

1 cup packed brown sugar

2 eggs, room temperature

1½ teaspoons vanilla extract

3 cups all-purpose flour

1 teaspoon salt

½ teaspoon baking soda

1½ cups white baking chips

½ cup chopped macadamia nuts

⅓ cup chopped dried pineapple

⅓ cup chopped dried papaya

Directions

  1. Preheat oven to 350°F. In a large bowl, beat butter, granulated sugar, and brown sugar with electric mixer until fluffy. Add eggs one at a time, beating after each addition. Beat in vanilla.
  2. In a medium bowl, stir together flour, salt, and baking soda; add to butter mixture and beat until well combined. Stir in white baking chips, macadamia nuts, pineapple, and papaya.
  3. Drop by tablespoons 2 inches apart onto ungreased cookie sheets. Bake about 12 minutes or until bottoms just begin to brown. Remove from cookie sheets and cool on wire racks.
