This vibrant Mango and Black Bean Salsa blends sweet, juicy mango with hearty black beans, corn, red bell pepper, and fresh herbs. Lightly seasoned with lime juice, garlic, and cumin, it makes a refreshing appetizer or snack.

Ingredients

1 medium mango, peeled, seeded and cut into ¾-inch cubes

1 (15-ounce) can black beans, rinsed and drained

1 cup frozen sweet corn, thawed

¼ cup chopped red bell pepper

¼ cup finely chopped green onions

¼ cup coarsely chopped fresh parsley

3 tablespoons fresh lime juice

1 tablespoon minced fresh garlic

¼ teaspoon salt

¼ teaspoon ground cumin

Directions
