Mozzarella & Basil Crostini

Inspired by classic Caprese flavors, these Mozzarella & Basil Crostini combine roasted garlic, balsamic vinegar, ripe tomatoes, and creamy mozzarella. Broiled just until melted and topped with basil, they make a fresh and crowd-pleasing starter.

Ingredients

3 medium unpeeled garlic cloves

10 baguette slices

3 tablespoons extra-virgin olive oil, divided

1 teaspoon balsamic vinegar

4 to 5 Campari tomatoes, thinly sliced

1 (8-ounce) ball fresh mozzarella, cut into ¼-inch slices, halved

Fresh basil, cut into thin ribbons; for garnish  

Directions

  1. Preheat oven to 400°F. Wrap garlic cloves in foil. Place in a small baking pan and bake for 20 to 25 minutes or until softened; cool.
  2. In a rimmed baking pan, place baguette slices. Drizzle 2 tablespoons olive oil on both sides of each slice. Bake for 4 to 6 minutes or until toasted, turning halfway through. Set toasts aside.
  3. Preheat oven broiler to high. Remove and discard garlic skins. In a small bowl, mash garlic with a fork; stir in remaining 1 tablespoon olive oil and vinegar.
  4. Spread garlic mixture on baguette toasts. Top each with 2 tomato slices and 2 mozzarella cheese half-slices, alternating tomato and cheese. Return to rimmed baking pan. Broil 6 inches from heat for 1 to 2 minutes or until cheese begins to melt. Garnish with fresh basil ribbons, if desired.
