No-Bake Cauliflower Au Gratin

Tender cauliflower smothered in a rich Gruyère cheese sauce, finished with a crunchy bacon and Manchego breadcrumb topping—easy, indulgent, and ready to serve.

Ingredients

4 slices bacon

½ cup panko bread crumbs

¼ cup grated Manchego cheese (1 ounce)

1 head cauliflower, cut into florets (8 cups)

¼ cup butter

⅓ cup all-purpose flour

1½ teaspoons kosher salt

½ teaspoon ground white pepper

¼ teaspoon ground nutmeg

2 cups 2% milk

4 ounces Gruyère cheese, shredded

Directions

  1. For crumb topping, in a skillet cook bacon until crisp. Transfer bacon to paper towel-lined plate, reserving drippings in skillet. Add bread crumbs to skillet; cook and stir over medium-low heat until toasted. Cool.
  2. Chop bacon. In a small bowl, combine bacon, toasted bread crumbs and Manchego cheese; set aside.
  3. In a large pot, add cauliflower to boiling water; cover. Cook for 2 minutes. Drain and rinse with cold water. Drain thoroughly and set aside.
  4. In a large saucepan, melt butter over medium heat. Stir in flour, salt, pepper and nutmeg. Stir in milk. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 minute more. Stir in Gruyère cheese until melted. Add cauliflower; cook over medium heat until heated through. Transfer to a serving bowl. Sprinkle crumb mixture on top. Serve immediately.
