A nutritious breakfast combining steel-cut oats and quinoa with apples, dried apricots, walnuts, and flaxseed. Sweetened lightly with agave nectar and perfect with milk or yogurt for a wholesome, energizing start to your day.

Ingredients

½ cup steel-cut oats

½ cup quinoa

2 tablespoons ground flaxseed

1 teaspoon ground cinnamon

¼ teaspoon sea salt

2 cups water

1 apple, cored and chopped

½ cup chopped dried apricots

¼ cup chopped walnuts

2 tablespoons agave nectar

Milk or yogurt (optional)

Directions

  1. In a 2-quart microwave-safe bowl, combine oats, quinoa, flaxseed, cinnamon and salt. Stir in water and apple. Microwave on high power for 12 minutes.
  2. Stir in apricots, nuts and agave nectar. Serve with milk or yogurt, if desired.
