Peach And Oat Cobbler

This wholesome cobbler pairs juicy peaches with a tender oat-flour topping, lightly sweetened and baked to golden perfection—a cozy dessert that’s both rustic and refreshing.

Ingredients

Nonstick cooking spray

½ cup whole-grain oat flour

½ cup all-purpose flour

2 tablespoons plus ⅓ cup granulated sugar, divided

1½ teaspoons baking powder

⅛ teaspoon salt

3 tablespoons butter

¼ cup peach nectar

2 tablespoons cornstarch

1 tablespoon lemon juice

2 16-ounce bags frozen sliced peaches

⅓ cup skim milk

Turbinado sugar, if desired

Directions

  1. Heat oven to 375°F. Lightly spray a 9-inch square baking dish with nonstick cooking spray.
  2. For topping, in a medium bowl combine flours, 2 tablespoons granulated sugar, baking powder and salt. Cut in butter with a pastry blender or two table knives until the flour mixture resembles coarse crumbs. Set aside.
  3. For filling, in a saucepan combine peach nectar, ⅓ cup sugar, cornstarch and lemon juice. Bring to boiling over medium-high heat. Add peaches, stirring to coat. Remove from heat and pour into prepared baking dish.
  4. Stir milk into topping mixture, stirring until just moistened. Using spoons, drop topping in small mounds onto filling. Sprinkle with turbinado sugar, if desired. Bake for 30 to 35 minutes or until a toothpick inserted near center comes out clean.
