This simple yet elegant baked popover serves as the perfect vessel for both sweet and savory fillings, making it a versatile option for any meal.

Ingredients

4 large eggs, at room temperature

1½ cups whole milk

½ teaspoon coarse kosher salt

1½ cups all-purpose flour

2 tablespoons salted butter, melted and cooled slightly

Powdered sugar, optional

Directions

  1. Place oven rack in lower third of oven; place a 6-cup popover pan on the lower oven rack. Preheat oven with popover pan to 425°F for 10 to 15 minutes.
  2. Meanwhile, in a large blender, place eggs, milk and salt. Cover and blend on high for 30 seconds or until mixture is pale in color and slightly foamy. Add flour and melted butter; cover and blend for 30 seconds or until mixture is well combined.
  3. Remove popover pan from the oven; generously spray each popover cup with nonstick cooking spray. Divide and pour about ½ cup batter into each prepared popover cup, filling each cup almost to the top.
  4. Bake for 20 minutes. Do not open oven; reduce oven temperature to 400°F. Bake for 12 to 14 minutes more or until golden brown.
  5. Remove pan from oven. Invert pan over a wire rack to remove popovers. Sprinkle with powdered sugar, if desired. Serve immediately.
  6. To make ahead: Completely cool popovers. Store in an airtight covered container at room temperature up to 1 day. To serve, place popovers on a baking sheet and reheat in a 350°F oven for 3 to 5 minutes or until lightly crisp and warmed through.
