Ingredients
2 large eggs
1 cup whole milk
1 cup all-purpose flour
1 tablespoon butter, melted
1⁄2 teaspoon salt
1 tablespoon cooking oil
2 cups fresh strawberries, cut up
4 teaspoons granulated sugar

Directions
In a blender container blend eggs and milk until smooth. Add flour, melted butter and salt; blend on high speed about 1 minute or until the batter is smooth. Let the batter rest at room temperature for 30 minutes.
Meanwhile, measure 1⁄2 teaspoon oil into each cup of a popover pan. Adjust the oven rack to the lowest position. Place popover pan in the oven and heat oven to 450°F.
After the batter has rested, pour it into a 4-cup liquid measure or another container with a pouring spout. Working quickly, remove the pan from the oven and divide the batter evenly among the 6 cups in the pan. Return the pan to the oven and bake for 20 minutes without opening the oven door.
Lower oven heat to 350°F and bake 15 to 18 minutes more or until golden brown all over. Gently flip the popovers out onto a wire rack to cool.
In a small bowl combine strawberries and sugar; let stand at room temperature about 20 minutes to draw out juices.
Halve popovers horizontally. Place bottom halves in dessert bowls. Fill each with a scoop of vanilla ice cream and sweetened strawberries. Add popover tops.
