These pumpkin bars are soft, moist, and perfectly spiced with pumpkin pie spice. Topped with a smooth cream cheese frosting, they’re ideal for fall gatherings, holiday parties, or a simple sweet snack.

Ingredients

Bars

2 cups all-purpose flour

2 cups granulated sugar

2 teaspoons pumpkin pie spice, plus additional for garnish

1½ teaspoons baking powder

1 teaspoon baking soda

½ teaspoon salt

1 (15-ounce) can 100% pure pumpkin

1 cup vegetable oil

4 large eggs

Frosting

1 (8-ounce) package cream cheese, softened      

¾ cup salted butter, softened

2 teaspoons pure vanilla extract

1 teaspoon salt

6 cups powdered sugar

4 to 6 teaspoons milk

Directions

  1. Preheat oven to 350°F. Lightly spray a 15×10-inch baking pan with nonstick cooking spray; set aside.
  2. For bars, in a large bowl, combine flour, sugar, 2 teaspoons pumpkin pie spice, baking powder, baking soda and salt. Beat with an electric mixer on low until combined. Add pumpkin, oil and eggs; beat on low just until moistened. Then beat on medium for 2 minutes. Spread batter in prepared pan.
  3. Bake for 22 to 26 minutes or until a wooden toothpick inserted near center comes out clean. Cool completely in pan on wire rack.
  4. Meanwhile, for frosting, in a clean large mixing bowl, beat cream cheese, butter, vanilla and salt with electric mixer on high until creamy. Add powdered sugar and 4 teaspoons milk. Beat on low speed until combined. Then beat on high for 2 minutes or until smooth and creamy. If necessary, beat in enough of remaining 2 teaspoons milk to reach desired consistency. Spread frosting on cooled pumpkin bars. Lightly sprinkle with additional pumpkin pie spice, if desired. Refrigerate until serving. Cut into bars to serve.
