Velvety and chocolate-forward, this real fudge frosting is smooth, buttery, and ideal for spreading over cakes, cupcakes, or brownies for an indulgent treat.
Ingredients
2 cups granulated sugar
⅔ cup evaporated milk
2 squares (2 ounces) unsweetened baking chocolate
2 tablespoons light corn syrup
¼ cup butter
1 teaspoon vanilla extract
Directions
- In a 2- or 3-quart saucepan stir together sugar, evaporated milk, chocolate and corn syrup. Clip on candy thermometer. Bring to a boil over medium-high heat, stirring frequently. Reduce heat to medium-low; cook and stir until temperature reaches 226°F, about 7 minutes.
- Remove from heat. Add butter without stirring. Cool until temperature reaches 140°F, about 40 minutes.
- Add vanilla and beat with a wooden spoon just until butter is mixed in, about 2 minutes.
- Immediately pour and spread fudge on cake. If fudge becomes too stiff before spreading, stir in a small amount of milk.
