Salmon Fillet With Avocado-Mango Salsa

Flaky salmon fillets paired with a bright, tropical avocado-mango salsa, accented with citrus and fresh herbs for a colorful, light, and delicious dinner.

Ingredients

1 large mango, pitted, peeled and chopped

1 avocado, pitted, peeled and chopped

1 medium orange, peeled and cut up

⅓ cup chopped red onion

1 jalapeno chile pepper, seeded and chopped, optional*

2 tablespoons finely chopped cilantro

1 tablespoon fresh lime juice l

½ teaspoon sea salt, divided

1 to 2 tablespoons olive oil

4 (5-ounce) salmon fillets

¼ teaspoon black pepper

Directions

  1. For salsa, in a medium bowl combine mango, avocado, orange, red onion, jalapeno (if desired), cilantro, lime juice and ¼ teaspoon salt. Cover and chill until serving time.
  2. In a large skillet, heat oil over medium-high heat. Add two salmon fillets. Cook for 5 to 10 minutes or until fish flakes easily with a fork, turning once. Remove salmon from skillet; keep warm. Repeat with remaining salmon.
  3. Season salmon with remaining salt and pepper. Serve salmon topped with salsa.

*Note: Chile peppers contain volatile oils that can burn skin and eyes. When working with chile peppers, wear protective gloves.
