Ingredients

Nonstick cooking spray

½ cup unsalted butter (1 stick)

½ cup heavy whipping cream

3 tablespoons water

¼ cup agave nectar

1 cup powdered sugar

1 teaspoon coarse sea salt

Directions

  1. Lightly spray an 8-inch square baking pan with cooking spray; line bottom and sides with parchment paper. Lightly spray parchment paper.
  2. Cut butter into small pieces. In a microwave-safe bowl combine butter and heavy whipping cream. Heat in microwave in 30-second intervals or until hot and butter is melted; set aside
  3. In a small saucepan combine water and agave nectar. Add the powdered sugar, stirring gently to combine with the liquid. Cook over medium heat until sugar mixture comes to a boil. Cover for 1 minute. Remove lid and clip a candy thermometer to side of saucepan. Cook until sugar mixture reaches 320°F. Gradually add butter mixture, stirring well after each addition. Continue cooking until mixture reaches 235°F. Immediately pour into prepared baking pan. Cool for 15 minutes.
  4. Sprinkle salt over caramel. Cool an additional 2 hours; cut into squares.
