Sausage And Spinach Skillet Strata

A hearty baked strata featuring sausage, spinach, mushrooms, and cherry tomatoes layered with crusty bread and melted cheeses, perfect for a flavorful breakfast or brunch.

Ingredients

1 tablespoon olive oil

8 ounces seasoned pork sausage

1 onion, chopped

2 cloves garlic, minced

1 cup sliced mushrooms

3 cups spinach leaves

Salt and black pepper, to taste

8 large eggs

1 cup milk

1 cup shredded Parmesan cheese

1 cup shredded cheddar cheese

3 cups baguette bread cubes

¼ cup chopped, roasted sweet red peppers

1 cup cut-up red and yellow cherry tomatoes

Fresh Italian parsley, for garnish, optional

Directions

  1. Preheat oven to 350°F. In a 10-inch cast-iron skillet, heat oil over medium heat. Add sausage, onion and garlic. Cook until meat is brown. Stir in mushrooms. Cook for 5 minutes or until tender and lightly browned. Add spinach. Cook for 1 to 2 minutes more or until spinach begins to wilt. Spread mixture evenly in bottom of skillet. Season to taste.
  2. In a large bowl, whisk together eggs and milk. Stir in cheeses, bread cubes and red peppers. Pour egg mixture over sausage mixture in skillet. Top with cherry tomatoes.
  3. Bake, uncovered, about 35 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes. If desired, sprinkle with parsley.

Note: You can use a regular skillet and 1½-quart baking dish instead of a cast iron skillet. Be sure to grease the baking dish and allow 5 to 10 minutes more baking time.
