Light, fluffy scones with a golden crust, perfect plain or studded with juicy blackberries for a sweet breakfast or tea-time treat.

Ingredients

2 cups all-purpose flour

1⁄4 cup granulated sugar

2 teaspoons baking powder

1⁄2 teaspoon salt

6 tablespoons butter

1 egg

¾ cup whipping cream

Directions

  1. Preheat oven to 375°F. In a large bowl stir together flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs.
  2. In a small bowl beat egg with a fork; beat in cream. Stir cream mixture into flour mixture until mixture holds together. (Dough will be sticky.)
  3. On a floured surface, roll out dough to 1⁄2-inch thickness. Cut with a 2- or 2½-inch biscuit cutter. Place on ungreased baking sheet. Sprinkle lightly with additional sugar. Bake for 12 to 14 minutes or until bottoms are light brown.

Blackberry Scones: Wash and thoroughly dry 1⁄2 cup fresh blackberries; add to dough with cream mixture.
