Seven Minute Frosting

By
Test Kitchen
Spring 2009
Seven Minute Frosting is a soft, airy meringue-style frosting made with sugar, egg whites, and a touch of vanilla. Whipped over gentle heat, it forms a glossy, spreadable frosting that pairs beautifully with cakes and cupcakes.

Recipe Information

Total Time:
Yield:
about 4 cups

Ingredients

1½ cups granulated sugar

1⁄3 cup water

3 large egg whites

1⁄4 teaspoon cream of tartar

Dash salt

1 teaspoon vanilla extract

Directions

  1. In the top of a 2-quart double boiler combine sugar, water, egg whites, cream of tartar and salt. Beat on low speed of electric mixer for 30 seconds just until blended.
  2. Place over boiling water so that the upper pan is not touching the water. Using electric mixer, beat the mixture constantly on high speed about 7 minutes until soft peaks form.
  3. Remove from heat and add vanilla. Beat with electric mixer 2 to 3 minutes longer or until frosting is of spreading consistency.
