Seven Minute Frosting is a soft, airy meringue-style frosting made with sugar, egg whites, and a touch of vanilla. Whipped over gentle heat, it forms a glossy, spreadable frosting that pairs beautifully with cakes and cupcakes.
Ingredients
1½ cups granulated sugar
1⁄3 cup water
3 large egg whites
1⁄4 teaspoon cream of tartar
Dash salt
1 teaspoon vanilla extract
Directions
- In the top of a 2-quart double boiler combine sugar, water, egg whites, cream of tartar and salt. Beat on low speed of electric mixer for 30 seconds just until blended.
- Place over boiling water so that the upper pan is not touching the water. Using electric mixer, beat the mixture constantly on high speed about 7 minutes until soft peaks form.
- Remove from heat and add vanilla. Beat with electric mixer 2 to 3 minutes longer or until frosting is of spreading consistency.
