S’mores Crispy-Rice Treats

Bring the campfire classic indoors with these s’mores crispy rice treats! Chewy marshmallows, crunchy graham crackers, and melty chocolate make these no-bake bars a hit for kids and adults alike. Simple to make, fun to eat, and perfect for any occasion.

Ingredients

5 tablespoons salted butter, plus additional softened butter for greasing

1 (16-ounce) package plus 2 cups mini marshmallows (12 cups total), divided

7 cups crispy rice cereal

1 sleeve or 9 honey graham crackers, broken into small pieces

1 (7.56-ounce) giant Hershey’s milk chocolate bar, broken into 25 pieces

Directions

  1. Line a 9-inch-square baking pan with parchment paper, extending paper over all edges of pan; use binder clips to hold edges of paper to sides of pan. Lightly butter bottom and sides of parchment paper with additional softened butter. Set pan aside.
  2. In a large microwave-safe bowl, microwave 5 tablespoons butter and 16 ounces (10 cups) marshmallows on medium for 2 minutes or just until butter and marshmallows are melted and combined, stirring with a silicone spatula every 30 seconds. Do not overcook.
  3. Immediately add cereal, 1 cup marshmallows, graham crackers and chocolate pieces to marshmallow mixture; stir just until combined. Transfer mixture to prepared baking pan.
  4. Butter one side of a 9-inch-square sheet of parchment paper. Place paper, buttered side down, on top of cereal mixture; gently press down to create an even layer. Removed buttered parchment paper. Sprinkle remaining 1 cup marshmallows on top; gently press into cereal mixture. Cool bars completely in pan.
  5. Use paper to transfer uncut bars to a cutting board. Using a sharp knife, cut into 9 (3-inch-square) bars. Wrap each bar in plastic wrap.
