Ingredients
4 large oranges
1 lemon
½ cup fresh orange juice
1 tablespoon fresh lemon juice
2 cups granulated sugar
2 cups nonalcoholic sparkling white wine
¹⁄₈ teaspoon kosher salt
½ (6-ounce) package liquid fruit pectin
Directions
- Zest peel from oranges and lemon; set aside. Remove and discard pith from citrus fruits. Cut segments from citrus; reserve any juices. (You should have about 2 tablespoons orange zest, 2 teaspoons lemon zest, 2 cups orange segments and ¼ cup lemon segments.)
- In a medium saucepan, combine orange and lemon zests and segments. Stir in orange and lemon juices, sugar, nonalcoholic sparkling wine and salt. Bring to boil; reduce heat. Simmer, uncovered, over medium heat for 20 to 25 minutes or until mixture is slightly thickened. Stir in liquid pectin; simmer for 6 to 8 minutes more. Cool completely (mixture will continue to thicken).
- Store in an airtight container in refrigerator up to 1 week. Serve at room temperature.
