Bright layers of tropical fruit nestled with smooth coconut mascarpone cream create a luscious, sun-kissed parfait that’s both refreshing and indulgent.

Ingredients

1 small pineapple, cored and cut into chunks

1 small papaya, seeded, peeled and cut into chunks

2 kiwi fruits, peeled and cut into chunks

1¾ cups heavy cream

4½ ounces mascarpone cheese

⅓ cup vanilla yogurt

¼ cup confectioners' sugar

2 tablespoons cream of coconut

Directions

  1. In a large bowl, combine the pineapple, papaya and kiwi; set aside.
  2. For coconut cream, in a chilled mixing bowl combine heavy cream, mascarpone cheese, vanilla yogurt, confectioners' sugar and cream of coconut. Beat with an electric mixer on medium speed until soft peaks form.
  3. Place a scoop of fruit in each glass followed by a dollop of coconut cream and repeat the layers.
