Turkey Pot Pie With Biscuit Topping

This hearty turkey pot pie layers a rich, creamy vegetable-and-turkey filling beneath golden, tender biscuit rounds, creating a warm and comforting dish perfect for family dinners or using up leftover turkey.

Ingredients

Classic Biscuits dough

5 tablespoons unsalted Irish butter, divided

2 cups red pearl onions, trimmed, skins removed and halved

1½ cups frozen baby sweet peas

1 cup sliced shiitake mushrooms with stems

1 cup trimmed and sliced whole baby bella mushrooms

4 medium carrots, peeled and thinly sliced

2 ribs celery with tender leaves, chopped

1 tablespoon plus ¼ teaspoon poultry seasoning, divided

1 teaspoon coarse kosher salt

½ teaspoon ground white pepper

¼ cup all-purpose flour

4 cups turkey or chicken broth

½ cup half-and-half

3 cups cubed cooked turkey breast

Fresh thyme, for garnish

Directions

  1. Preheat oven to 425°F.  Spray a 13×10×2½-inch oval baking dish with nonstick cooking spray; place in a rimmed baking pan.
  2. Prepare Classic Biscuits dough; laminate and cut dough into 2½- to 3-inch biscuit rounds as directed. Do not bake. Set aside 12 biscuit dough rounds.
  3. Melt 3 tablespoons butter in a large deep skillet over medium-low heat. Add onions, frozen peas, shiitake and baby bella mushrooms, carrots and celery. Cook for 2 to 3 minutes or until slightly softened.
  4. Stir in 1 tablespoon poultry seasoning, salt and white pepper. Sprinkle with flour; stir until combined. Stir in broth and half-and-half. Add turkey; cook for 10 to 12 minutes or until heated through. Pour mixture into prepared baking dish.
  5. Arrange the 12 reserved biscuit dough rounds on top of turkey mixture. Bake, uncovered, for 14 to 16 minutes or until biscuits are golden brown and turkey mixture reaches 145°F.
  6. Microwave remaining 2 tablespoons butter in a small microwave-safe bowl until melted. Stir in remaining ¼ teaspoon poultry seasoning until combined.
  7. Lightly brush butter mixture on biscuit topping. Garnish with fresh thyme, if desired. Let stand for 5 minutes before serving.
