Two-Melon Soup

A chilled and refreshing melon soup pairing cantaloupe and honeydew purées for a bright, sweet, and elegant warm-weather starter.

Ingredients

3 cups cubed cantaloupe

¼ cup confectioners’ sugar

2 tablespoons lime juice

3 cups cubed honeydew melon

Directions

  1. In a blender or food processor, combine cantaloupe, half of the confectioners’ sugar and half of the lime juice. Cover and blend until smooth. Transfer to a medium bowl; cover and chill for 2 to 24 hours.
  2. Repeat with honeydew, remaining confectioners’ sugar and remaining lime juice. Chill, covered, in a separate bowl.
  3. To serve, ladle equal amounts of each melon mixture into individual bowls, keeping mixtures as separate as possible. Garnish with melon balls, if desired.
