This creamy almond nog blends soaked almonds, figs, and a touch of vanilla into a velvety, spiced drink, served warm and topped with almond whipped cream for a festive treat.

Ingredients

Almond Milk

9 cups filtered water, divided

1 cup organic raw whole almonds

4 fresh whole brown figs, stemmed

½ teaspoon coarse kosher salt

Simple Syrup

½ cup granulated sugar

½ cup filtered water

4 fresh whole brown figs, stemmed and halved lengthwise

1 vanilla bean, split lengthwise

Nondairy almond whipped topping, for serving

Directions

  1. For almond milk, in a large glass bowl or measuring cup, add 4 cups filtered water and whole almonds. Cover with plastic wrap; refrigerate for 6 hours or overnight. Drain almonds in a colander; discard water.
  2. Meanwhile, for simple syrup, in a small saucepan, combine sugar, filtered water and halved fresh figs. Scrape seeds from vanilla bean halves into sugar mixture; add pods. Cook over medium heat for 6 to 7 minutes or until figs break down and syrup is slightly reduced and sticky, stirring frequently. Remove from heat; discard vanilla bean halves.
  3. For almond milk, in a high-powered blender, add drained almonds, remaining 5 cups filtered water, whole figs, salt and simple syrup. Cover and blend on high for 3 to 5 minutes or until smooth.
  4. Line a fine-mesh sieve with a single layer of cheesecloth. Set sieve over a medium bowl; strain almond mixture. Discard puréed solids; set almond milk aside.
  5. For almond nog, in a medium saucepan, heat almond milk over medium-low heat until small bubbles form. Ladle nog into 8-ounce mugs. Garnish with almond whipped topping, if desired.
