Nonstick cooking spray
2 lemons
3 cup granulated sugar
2 cups water
Directions
- Preheat oven to 200°F. Line a large rimmed baking pan with foil. Generously spray a large wire rack with nonstick cooking spray; place in baking pan and set aside.
- Wash and dry lemons. Cut crosswise into ¼ inch-thick slices; remove seeds if necessary.
- In a very large skillet over medium heat, stir together sugar and water and bring to a boil, about 3 minutes. Add lemon slices in a single layer. Gently boil uncovered over medium heat for 8 to 10 minutes or until slices are translucent, turning slices over occasionally. Reduce temperature as syrup thickens, to maintain a simmer.
- Transfer citrus slices to prepared wire rack in baking pan; discard syrup. Bake for 2 to 3 hours or until dry and leathery, turning slices over after every hour. Let stand on wire rack until cool and slightly crisp.
