Caprese Chicken And Zucchini En Papillote

Chicken and zucchini are baked en papillote with cherry tomatoes, turmeric butter, and fresh basil, creating a healthy, aromatic dish with tender, juicy chicken.

Ingredients

¼ cup salted butter, melted

1 tablespoon peeled and grated fresh turmeric

1 teaspoon honey

2 (8-ounce) boneless, skinless chicken breasts

2 medium zucchini, cut into ¼-inch-thick slices

2 lemons, sliced

Coarse kosher salt

Ground white pepper

1 cup heirloom cherry tomatoes, sliced

Fresh basil, for garnish

Directions

  1. Preheat oven to 425°F. Lightly spray a large rimmed baking pan with nonstick cooking spray; set aside. In a small bowl, stir together melted butter, turmeric and honey; set aside.
  2. Pat chicken dry with paper towels. Cut each chicken breast in half lengthwise. To score chicken, use a sharp knife to make shallow parallel cuts on top of each chicken portion; set aside.
  3. To assemble packets, cut four 15-inch-diameter parchment paper circles. Fold each in half; then open. Divide and place zucchini and lemon slices in center near fold on one-half of each parchment round. Season lightly with salt and pepper. Place chicken, scored sides up, on top of zucchini and lemon slices. Drizzle butter mixture over chicken and vegetables; top with cherry tomatoes and lightly season with additional salt and pepper.
  4. Fold the other half of parchment rounds up and over chicken and vegetables to form semicircles. Working from one end, fold edges together in a double fold. Fold only a small section at a time to ensure a tight seal. Place packets in prepared baking pan.
  5. Bake packets for 16 to 18 minutes or until chicken reaches 165°F. (Insert an instant-read thermometer through the paper into the chicken.) Transfer parchment packets to serving plates. Use a sharp knife or kitchen shears to cut a large × across the top of each packet to let steam escape. Carefully fold back paper. Garnish with basil, if desired.
